1.3 Local Food- Sapa

Sapa is a place famous for its beauty of nature, but also has a lot to offer when it comes to food. You will find food with a taste of the nature such as Cap Nach Pork, mushrooms and more!

Sapa’s specialty 

  • Sapa Cap Nach Pork
    Cap Nach pigs are very special food in this region. The small pigs are less than 20 kilogram so they are easy to carry. The pigs had a healthy, free life and were never locked up.
    There are diverse ways to prepare this meal. The first way is that they roast a pig directly on charcoal. The skin covers the pork to make the pork very tasty and fleshy inside. The other way is to stir-fry the pork with a little water and herbs. 
  • Sapa Chinese Black Mushroom
    The cool temperature in Sapa causes the grow of Chinese black mushrooms in the forest. There is no other place in Vietnam were you can find mushrooms and that’s why it is a Sapa specialty you need to try. You can find the mushroom stir-fried, cooked or grilled.
  • Sapa Pau Play Day Cake
    A nice snack that looks easy to make but it’s actually quite difficult. To make the perfect cake starts with choosing the best glutinous rice there is. The rice is soaked in water for 2 hours and then steamed till it’s well done. After that, they put the rice into a wooden rice polisher and grind it till it’s viscid, well-kneaded and sticky. The green filling inside is smooth and soft green peas.  
  • Sapa Thang Co
    One of the most famous dishes of the H’mong people. They usually eat the dish with special occasions. The dish is a soup which consists of a horse’s meat, bones and organs. The horsemeat needs to be stewed with 12 spices for a few hours. Sounds maybe not so tasty, but you will like it once you taste it. 
  • Sapa Fructus Crataegi Wine
    It is a exclusive wine. The Fructus Crataegi needs to be soaked really carefully. The water where they cook it in will be used to make the wine. It tastes like drinking carbonated gentle drinks. The H’moong believes that the ‘’love fruit’’ will intoxicate you after consuming it. 
  • Salmon hot pot
    This hot pot will bring you a unique flavour, fresh meat which is very nutritious. The broth is cooked with salmon bones and tastes sweet. It gets served with fresh vegetables. 

Sapa is a touristic place that tries to serve almost every kitchen, which means that there’s probably just a little difference between menus. Looking for more authentic local fare, go to one of these restaurants or head to the area near the bus station.
